Yukon Goldie Mashed Potatoes

“Let’s take it back to basics, You in the midst of greatness.”

-A.S.A.P Rocky

Classic, restaurant-style mashed potatoes made with Yukon Golds. Serves 6-8.

3lbs of Yukon Golds

1 ½  cups Heavy cream

1 cup of milk

1 stick of butter

1 ½ T of salt

  1. Peel the potatoes and cut em into quarters.

  2. Place them in cold water (so everything cooks evenly), turn the heat all the way up.

  3. Wait 15-20 until fork tender.

  4. Then when they are cool enough to handle, that’s when you want to grate them with a microplane or the finest setting cheese grater you have. (This will give you no lumps)

  5. Heat the milk and heavy cream in a small saucepan.

  6. Cube up the butter and put into the potatoes

  7. Add the heated milk to the potatoes too

  8. Then whip it until nice and creamy but do not over whip (This should be no longer than a New York Minute)

  9. Garnish with fresh chives over top.
