This is a Remy 1738-infused Apple Pie. Serving options are with vanilla Ice Cream or our homemade whipped C.R.E.A.M. (recipe to follow). Serves 6, 7, 9 depending on how you slice it.


About the Crust:

*If you are like me or PNB, and you have No Time for handmade crusts right now, pick up one from the store (I recommend Trader Joe’s Pie Crusts). But, if you’re like my girl, Kehlani, and you live for the challenge, here’s how to whip up a crzy good crust from scratch:

Ingredients (Crust):

2 ¼ cups all-purpose flour

1 ½ Tbs. sugar

¾ tsp. salt

1 stick (½ cup) cold unsalted butter or margarine, cut into small pieces

1 large egg, beaten, or ¼ cup milk, for brushing crust

¼ cup sugar


Method (Crust):

  1. Combine flour, sugar, and salt in food processor. Put it On pulse.  

  2. Add butter; pulse 5x (mixture should look like crumbly, coarse)

  3. Add 1/2 cup water; pulse until dough just comes together.

  4. Transfer to large piece of plastic wrap, and press into flat disk.

  5. Wrap it tightly, and chill 1 hour (or overnight).

Ingredients (Filling):

¼ lb. dried apricots, chopped up

¼ lb. dried cherries

¼ lb. dried cranberries

¼ lb. raisins

Peel of 1 lemon, removed with peeler

⅓ cup 1738 Remy Martin

6 Granny Smith apples, divided & cored

¼ cup sugar

¼ cup brown sugar

2 T cornstarch

1 T lemon juice



  1. Place all dried fruits and lemon peel in a large mixing bowl; cover with boiling-hot water, let stand for 20 mins. Drain, then return to bowl. Add 1738 Remy Martin liqueur while fruits are still hot. Let plump in liqueur until cool.

  2. Grate 3 apples and stir ‘em into fruit mix along with sugar and brown sugar, cornstarch, lemon juice.

  3. Preheat oven to 375 degrees. Roll out dough to 14-inch circle, and place on baking sheet coated with cooking spray. Spread dried-fruit mixture in center of crust, (leave a 2 1/2-inch border).

  4. Peel and halve remaining apples. Thinly slice ‘em.

  5. Arrange slices in a concentric circle atop dried fruit.

  6. Fold dough border over apples and make raw edges.

  7. Brush the edges with egg, then sprinkle with brown sugar.

  8. Bake 45 minutes to 1 hour or until crust is golden and edges of apples begin to brown.

  9. Sprinkle with ground nutmeg and cinnamon on top.
